200 grams of halloumi cheese, sliced into 1 cm thick pieces
4 cups of mixed salad greens (arugula, spinach, or kale)
1 cup of cherry tomatoes, halved
1 medium cucumber, diced
1/2 red onion, thinly sliced
1 avocado, sliced
2 tablespoons of olive oil
Juice of half a lemon
Salt and pepper to taste
A handful of fresh herbs (basil or mint) for garnish
Instructions
