  • 200 grams of orzo pasta
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 50 grams of feta cheese, crumbled
  • 3 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper

  • Instructions

  • Cook the orzo. Boil water and add it to the pot. Once cooked to your liking, drain and let it cool.
  • Chop vegetables. Dice cucumbers, bell peppers, and red onions into small pieces. Toss them into a big bowl.
  • Prepare dressing. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. This will bring everything together.
