200 grams of orzo pasta
1 cucumber, diced
1 bell pepper, diced
1 red onion, diced
50 grams of feta cheese, crumbled
3 tablespoons of olive oil
2 tablespoons of lemon juice
1 teaspoon of salt
1/2 teaspoon of pepper
Instructions
Cook the orzo. Boil water and add it to the pot. Once cooked to your liking, drain and let it cool.
Chop vegetables. Dice cucumbers, bell peppers, and red onions into small pieces. Toss them into a big bowl.
Prepare dressing. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. This will bring everything together.
Mix ingredients. Add the cooled orzo to the vegetable mix. Pour the dressing over it and stir until everything’s coated.
Add feta. Crumble feta cheese over the top and give it a gentle mix. This adds a nice salty flavor.
Chill and serve. Let it sit in the fridge for a bit so everything can blend together. Then, dig in!
