2 medium potatoes, diced
2 tablespoons of olive oil
1 cup of halved cherry tomatoes
1 medium red onion, diced

2 cloves of minced garlic
2 tablespoons of lemon juice
Instructions
Rinse 1 cup of quinoa under cold water, combine with 2 cups of water in a medium saucepan, bring to a boil and then cook for about 15 minutes until water is absorbed.
Preheat the oven to 400°F (200°C), dice the potatoes, toss with olive oil, salt, pepper, and garlic, then spread on a baking sheet and roast for 25-30 minutes.
