4 medium-sized potatoes, diced
6 large eggs
1 cup shredded cheese (cheddar or your choice)
8 small corn or flour tortillas
1 tablespoon olive oil or butter
Salt and black pepper to taste
Optional toppings: diced avocado, salsa, chopped cilantro, hot sauce
Instructions
In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and sprinkle with a pinch of salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until they're crispy and golden on the outside and tender in the middle.
While the potatoes are cooking, crack the eggs into a bowl. Whisk them until they’re fully blended, adding a pinch of salt and pepper.
Once the potatoes are done, push them to one side of the skillet and pour the egg mixture into the other side. Cook and gently fold the eggs until they’re just set, about 2-3 minutes.
When the eggs are almost ready, sprinkle the shredded cheese over the top and mix it all together.
In another small skillet or on a griddle, lightly warm the tortillas for about 20 seconds on each side until they’re pliable.
Spoon the potato and egg mixture onto each tortilla and top with any optional toppings you like.
Fold the tortillas over the filling, and enjoy!
