  • ¼ cup of cilantro (optional)
  • 1 tablespoon of olive oil

  • Instructions

  • Preheat your oven to 375°F (190°C). In a skillet, heat the olive oil over medium heat, then add the chopped onion and minced garlic. Sauté for about 5 minutes until softened and aromatic.
  • In a large mixing bowl, combine the shredded chicken, half of the enchilada sauce, sautéed onion, and garlic. Stir until well mixed. Adjust seasoning with salt and pepper if needed.
  • Take a tortilla, spoon about ¼ cup of the chicken filling onto it, roll it tightly, and place it seam-side down in a greased baking dish. Repeat until you fill the dish.
  • Pour the remaining enchilada sauce over the arranged enchiladas and sprinkle with cheese.
  • Cover the baking dish with foil, bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.
