3 cups of shredded cooked chicken
2 cups of enchilada sauce
10–12 corn tortillas
2 cups of shredded cheese (cheddar or Mexican blend)
1 medium chopped onion
2 cloves of minced garlic
¼ cup of cilantro (optional)
1 tablespoon of olive oil
Instructions
Preheat your oven to 375°F (190°C). In a skillet, heat the olive oil over medium heat, then add the chopped onion and minced garlic. Sauté for about 5 minutes until softened and aromatic.
In a large mixing bowl, combine the shredded chicken, half of the enchilada sauce, sautéed onion, and garlic. Stir until well mixed. Adjust seasoning with salt and pepper if needed.
Take a tortilla, spoon about ¼ cup of the chicken filling onto it, roll it tightly, and place it seam-side down in a greased baking dish. Repeat until you fill the dish.
Pour the remaining enchilada sauce over the arranged enchiladas and sprinkle with cheese.
Cover the baking dish with foil, bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.
Let the enchiladas sit for about 5 minutes before serving. Top with extra cilantro if desired.
