1 cup of fresh raspberries
1 can (13.5 oz) of coconut milk
1 cup of pineapple juice
1.5 oz of white rum
2 tablespoons of sugar or honey
1 tablespoon of lime juice
2 cups of ice cubes
3–4 mint leaves (for garnish)
Instructions
Begin by washing the fresh raspberries under cold water thoroughly. Select the ripest ones for the best flavor. Reserve a few for garnish later.
In a blender, combine the prepared raspberries, coconut milk, pineapple juice, white rum, sugar or honey, and lime juice. Blend on high until smooth.
Taste your mixture. If you prefer it sweeter, feel free to add more sugar or honey and blend again.
Add the ice cubes to the blender and blend on high until the ice is crushed and mixed evenly.
