  • 1 teaspoon of ground cinnamon
  • 1/2 cup of chopped walnuts
  • 8 oz of vegan cream cheese
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and a pinch of salt.
  • In another bowl, mix the coconut milk, apple cider vinegar, and vanilla extract.
  • Pour the wet mixture into the dry ingredients, stirring until just combined.
  • Fold in the chopped walnuts gently.
  • Pour the batter into a greased 9-inch round cake pan. Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake is cooling, in a bowl, blend the vegan cream cheese with powdered sugar and a splash of vanilla extract until smooth.
  • Once the cakes have cooled completely, spread half of the cream cheese filling on top of one layer, then gently place the second layer on top. Spread the remaining filling on top of the second layer.
