2 tablespoons of olive oil
1 medium onion, diced
3 cloves of fresh garlic, minced
1 bell pepper, diced
1 can (14 ounces) of diced tomatoes
1 cup of fish stock or vegetable broth
1 teaspoon of red pepper flakes
1 pound of mussels, cleaned and debearded
1 pound of shrimp, peeled and deveined
1 pound of white fish fillets, cut into chunks
½ cup of fresh parsley, chopped
Salt and pepper to taste
Crusty bread, for serving
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and diced bell pepper, stirring occasionally. Cook for another 2-3 minutes until garlic is fragrant.
Stir in the canned diced tomatoes (juices and all), the fish stock, and red pepper flakes. Bring everything to a gentle simmer.
Once simmering, toss in the mussels. Cover the pot and let them cook for about 5 minutes until they start to open.
Add the shrimp and fish fillets. Stir gently and cover again, cooking for another 5-7 minutes until the shrimp turn pink.
Stir in the fresh parsley and season with salt and pepper to taste.
Serve hot with a side of crusty bread.
