  • 3 large eggs

  • Instructions

  • In a bowl, whisk the eggs with salt and pepper. Heat a skillet over medium heat and add oil or butter. Pour in the eggs and scramble until just set, then remove from heat.
  • In the same skillet, add more oil if needed, and sauté the diced bell peppers and onions for 3-4 minutes until tender.
  • Lay one tortilla down, sprinkle cheese on one half, layer with scrambled eggs and sautéed veggies, and add more cheese. Fold the tortilla.
  • Wipe down the skillet, turn the heat to medium-high, and add a touch more oil. Cook the quesadilla for 2-3 minutes on each side until golden brown.
  • Remove from heat, let sit for a minute, cut into wedges, and serve warm.
