4 large flour tortillas
1 cup shredded cheese
3 large eggs
1/2 cup bell peppers, diced
1/4 cup onion, diced
1 tablespoon olive oil or butter
Salt and pepper, to taste

Instructions
In a bowl, whisk the eggs with salt and pepper. Heat a skillet over medium heat and add oil or butter. Pour in the eggs and scramble until just set, then remove from heat.
In the same skillet, add more oil if needed, and sauté the diced bell peppers and onions for 3-4 minutes until tender.
Lay one tortilla down, sprinkle cheese on one half, layer with scrambled eggs and sautéed veggies, and add more cheese. Fold the tortilla.
Wipe down the skillet, turn the heat to medium-high, and add a touch more oil. Cook the quesadilla for 2-3 minutes on each side until golden brown.
Remove from heat, let sit for a minute, cut into wedges, and serve warm.
